ARROZ
TAPADO PERUANO
Ingredienti:
2
bicchieri di riso thai o Basmati
3
hg carne macinata
un
pugnetto di noci tritate finemente, meglio se brasiliane
(
pecanas)
concentrato
di pomodoro 1 cucchiaio
½
peperone rosso + peperoncino
prezzemolo
un
pugno di uvetta
6
olive nere grosse
2
uova dure
1
bicchiere di brodo di dado
sale,
pepe e comino in polvere.
Preparazione:
Lessare
il riso e metterlo da parte.
In
una padella a fuoco alto soffriggere la cipolla e poi l’aglio tritati.
Quando
sono dorati aggiungere la carne, sale, pepe e comino, il peperone a julienne, il peperoncino, l’uvetta
sultanina e le olive a pezzetti e le noci triturate.
Aggiungere
il brodo e lasciare cuocere qualche minuto.
Ora
aggiungete le uova a pezzettini e il prezzemolo tritato.
Ora
prendete una grossa tazza della colazione
bagnatela con acqua fredda, mettete uno strato di riso, uno strato di carne e
chiudere con un altro stato di riso. Con attenzione capovolgete nel piatto.

ARROZ TAPADO / Molded Rice with Meat Filling

2 lb (1 k) white rice
4 garlic cloves, minced
1 onion, finely chopped
½ teaspoon cumin
1 lb (½ k) ground meat
6 black olives, seeded and quartered
½ cup raisins
3 eggs, cooked, cut in 8 wedges
¼ cup parsley, chopped
¼ cup oil
1 teaspoon paprika
Salt
Pepper
Preparation:
Prepare rice the usual way.
Heat oil in a large skillet. Sauté onion until tender, add garlic and cook 1 minute more. Add paprika, cumin, and pepper. Combine well and add meaat. Cook meat stirring frequently 8 to 10 minutes or until no liquid is left. Correct seasoning.
Add olives, raisins, cooked eggs and chopped parsley. Mix well.
Serve individually. Lightly oil a ramekin and fill half with rice. Spoon 2 or 3 tablespoon meat mixture on top. Top with rice and press.
Invert on dish and unmold. Sprinkle with chopped parsley on top. Can be served with french fries.

Arroz Tapado (literally meaning covered rice in Spanish) is a popular dish found within the Peruvian Cuisine.

Both dishes share the use of a seasoned ground beef as their main ingredient. The ground beef is prepared with cooked onions, chopped boiled egg, raisins and olives.
Arroz tapado is made by tightly packing rice and the seasoned ground beef into a bowl. The bowl is then turned over onto a plate and removed so that only the ingredients remain.
